A twist on the classic breakfast item, pancakes. Pancakes are a great option for breakfast or dessert because they can be both sweet, and savoury! Maple syrup, fresh fruit, berry compote, icing sugar, shredded coconut, jam, marmalade – or, for the savoury version, you could use vegan cream cheese, mixed with fresh herbs and cracked black pepper, peanut butter, guacamole and salsa.
Here's are our easy vegan pancake recipe:
Ingredients:
1¼ cup plain flour
2 tbsp sugar (any sugar)
2 tsp baking powder
½ tsp salt
1¼ cup water
½ cup coconut oil or vegetable oil
1 tbsp vegan protein powder (optional) - why not try Vanilla Sun Warrior Vegan Protein powder!
Equipment:
Large mixing bowl
Frying pan
Whisk
Ladle
Heart-shaped moulds (silicone ones work best but cookie cutters work, too)
Method:
Mix the dry ingredients together in a large bowl, then gradually add the water and about half the oil, whisking the mixture the whole time.
Heat the pan, add a small amount of oil, then use the ladle to pour batter into moulds.
You'll know to turn them over when the bubbles form at the top. If the batter gets thicker, keep adding the remaining oil into the mixture.
Enjoy with toppings of your choice!
